Best Mexican Casseroles

Southwestern Casserole

  • 2 cups cooked spaghetti
  • 8oz. can chili con carne
  • 8 oz. tamales
  • 6 oz. can creamed corn
  • 4 oz. black olives, cut in half
  • Monterey Jack Cheese, sliced
  • salt and pepper to taste

Remove paper from tamales and cut into pieces.  Mix all ingredients together and place in casserole dish.  Top with sliced cheese.  Cover and bake 45 minutes at 400 degrees.  Recipe may be easily doubled or tripled

    Taco Pie

  • 1package refrigerated crescent rolls
  • 1 package taco seasoning
  • 1/4 cup water
  • 1 package corn chips
  • 1 pound hamburger
  • 1/3 cup green stuffed olives, sliced
  • 6 slices American cheese
  • 1 cup sour cream

Brown meat and drain.  Add taco mix, water and olives.  Simmer 5 minutes. Spread crescent rolls flat in bottom of 9-inch pie plate to form crust.  Cover with layer of corn chips.  Top with meat mixture.  Spread sour cream over meat.  Place cheese slices over sour cream.  Add more corn chips and bake 30 minutes at 375 degrees.  Garnish with shredded lettuce, tomatoes, and avocado slices.
